Creamy Lemon Pasta – Instant Pot Recipe

 

This summer we have been loving lemons! So we wanted to share our creamy lemon pasta recipe for the instant pot with you. We have been adding lemon to everything we could and so why not pasta? We think you will love our creamy lemon pasta just as much as we have.

Creamy Lemon Pasta For the Instant Pot

Ingredients
  • 8 oz of spaghetti noodles
  • 1 ½ c of chicken broth
  • 2 cloves of garlic, minced
  • 1 shallot, sliced thin
  • 1 cup of parmesan cheese, shredded or shaved
  • 1 cup of half and half
  • 1 lemon
  • 1 teaspoon of butter or olive oil
  • 1 tablespoon of butter
Directions
  • Step 1 Turn the instant pot to saute.
  • Step 2 When it is hot, add 1 teaspoon of butter or olive oil and shallot and saute for 2 minutes.
  • Step 3 Add the minced garlic and turn the instant pot off. Allow to rest for one minute.
  • Step 4 Add chicken broth.
  • Step 5 Add juice from half of the lemon.
  • Step 6 Stir to deglaze.
  • Step 7 Add the spaghetti noodles. You can break them in half, or even thirds if desired.
  • Step 8 Use a spoon to push the noodles into the broth, but don’t stir.
  • Step 9 You want the noodles submerged.
  • Step 10 Add a tablespoon of butter to the top of the noodles.
  • Step 11 Replace the lid and seal.
  • Step 12 Use the manual setting and cook for 5 minutes.
  • Step 13 It should take 10 minutes or so until the instant pot reaches pressure.
  • Step 14 When the timer alerts, use the quick release valve.
  • Step 15 Open the instant pot and add half and half and parmesan cheese.
  • Step 16 Stir.
  • Step 17 Place the lid on the instant pot and allow the food to rest for about 4 to 5 minutes to allow the sauce to thicken and the cheese to melt.
  • Step 18 Squeeze the juice from the remaining half of the lemon onto the pasta.
  • Step 19 Toss and serve.
  • Step 20 Allow leftovers to cool, then store in an airtight container.
