Soft Chewy Oatmeal Raisin Cookies

We love soft chewy oatmeal raisin cookies here at our house and we found that soaking the raisins first adds just what is needed to make the cookies moist and chewy. Oatmeal cookies use to be just a holiday treat but now we enjoy them any time of year. We have tried to change our eating to a healthier way and that includes baking our soft chewy oatmeal cookies and treats so that we control the ingredients. 

 

We thought we would share our favorite recipe for soft chewy oatmeal raisin cookies with you and allow your family and friends to enjoy them also. But don’t blame us if your family decides they want homemade cookies all the time from here on out. It is a healthier way to keep sweets in your home.

Soft Chewy Oatmeal Raisin Cookies

Ingredients
  • 1 cup (2 sticks) softened butter
  • 1/2 cup sugar
  • 1 cup packed brown sugar
  • 2 Tablespoons vanilla
  • 2 eggs
  • 1 1/2 cups flour (I prefer unbleached)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 cups old-fashioned oats
  • 1 1/2 cups raisins (presoaked in water & drained before adding in.)
Directions
  • Step 1 Preheat the oven to 350. (This is a stiff dough so I use my KitchenAid stand mixer)
  • Step 2 Cream together butter and sugars.
  • Step 3 Add vanilla and eggs.
  • Step 4 Stir in flour, baking soda, salt, and cinnamon, and mix well. Mix in the oats until well combined.
  • Step 5 Stir in the raisins.
  • Step 6 Drop dough onto an un-greased cookie sheet according to the size you want.
  • Step 7 Bake at 350 for 10-12 minutes. Bake till slightly golden.
  • Step 8 Let the cookies cool on the sheet for one minute then transfer to a cooling rack.
