Simple, flavorful. It is one of our favorite quick lunch ideas or also works great for last-minute company. You can never go wrong with a bowl of chicken salad and a bowl of crackers or bread of your choice.
Ingredients Needed for This Chicken Salad Recipe
You will need some chicken, celery, grapes, apricots, and onions to start with. The chicken can be canned chicken or some you cooked yourself. You will also need some honey, mayonnaise, Dijon mustard, salt, and pepper to make the dressing part of the chicken salad. We try to use all organic ingredients when possible but sometimes you have to go with what you have on hand.
You will need to:
- Combine the chicken, celery, grapes, apricots, and onions in a large bowl.
2. In a separate bowl combine the honey, mayonnaise, Dijon mustard, salt, and pepper and whisk until well combined.
3. Add the mayonnaise mixture to the chicken mixture and stir to combine all of the ingredients.
Cover and refrigerate until ready to serve.
Enjoy as is, with crackers, over lettuce, or in a tortilla wrap.

- ● 1 cup sliced celery.
- ● 1 ½ cups halved red grapes.
- ● ¼ cup dried apricots, chopped
- ● ¼ cup green onions, sliced
- ● ¾ cup mayonnaise
- ● 2 tbsp honey
- ● 1 tbsp Dijon mustard
- ● Salt & Pepper to taste
