It’s Fall and that means everything Pumpkin… LOL. Just kidding, but I will say, I like a lot of different pumpkin recipes for desserts or snacks. So today, I thought I would share one of my favorite, Pumpkin Chocolate Chip Bread. I believe this will become one of your family favorites also.
This recipe will also make a great “make-ahead & freeze” item to have on hand for when friends drop by or your last-minute invite after church to show hospitality to a family or someone who lives alone that could use a visit with others.
TIP – Anytime you are in the kitchen baking or cooking, take a minute to think ahead and
see if the recipe might be a great one to share with someone who lives
alone & could use a gift to know someone is thinking of them.
Remember that Fall is not the only time of year to have pumpkin desserts and bread. Christmas is another time I love to make items with pumpkin. I will have more recipes coming for the holidays.
Pumpkin Chocolate Chip Bread
Pumpkin is a great flavor for any time of year but the holidays always seem better with Pumpkin Desserts to share.
Ingredients
- 1 ¾ cup all-purpose flour, divided
- 1 tsp. Baking soda
- 1 ½ tsp. Cinnamon
- 1 tsp. Pumpkin pie spice
- ½ tsp. Salt
- 2 large eggs
- ¾ cup granulated sugar
- ½ cup light brown sugar
- 1 ½ cups pumpkin puree
- ½ cup vegetable oil
- 1 tsp. Vanilla
- ¼ cup milk
- 1 cup semi-sweet chocolate chips
Directions
- Step 1 1. Preheat your oven to 350 degrees Fahrenheit.
- Step 2 2. Spray 9×5 loaf pan with non-stick spray and optional, line with parchment paper
- Step 3 3. In a large bowl, whisk together 1 ½ cups flour, baking soda, cinnamon, pumpkin pie spice, and salt.
- Step 4 4. In a medium bowl, whisk together eggs, sugar and brown sugar.
- Step 5 5. Add pumpkin puree, vegetable oil, vanilla, and milk, and gently fold the ingredients together using a rubber spatula, careful not to overmix- the batter will be lumpy.
- Step 6 6. In a small bowl, toss chocolate chips in remaining ¼ cup flour.
- Step 7 7. Add chips and flour to the bowl, and fold the chips into the batter gently, until just combined.
- Step 8 8. Pour batter into your loaf pan, and if desired, sprinkle a few extra chocolate chips on top.
- Step 9 9. Bake for 55-75 minutes, checking after 55 minutes for doneness in the center. If the top of the bread begins to brown too quickly, you can tent it with foil.
- Step 10 10. Once finished, allow to cool completely before removing from the pan. Slice into 10 equal slices.
