White Chicken Chili in the Instant Pot

This recipe was so easy to make. I had the ingredients on hand and I didn’t have to use an envelope mix of seasonings in it so that is a WIN for me! My family loved it and they usually don’t like White Chicken Chili because of the white beans. LOL…. Who doesn’t like to eat white beans? My family, that’s who. I don’t know how I made it this far with them. LOL.

Here is the recipe for this Instant Post Recipe but it can also be made on the stove or in a slow-cooker.

White Chicken Chili

2 chicken breast, boneless, skinless, cubed (about 1 pound of meat)

3 tablespoons of olive oil

1 tablespoon minced garlic

1/2 onion, diced

16 ounce chicken broth

1 smll can diced green chilies

1 can of corn, drained

1 16 ounce jar of salsa verde

2 cans of white beans

salt to taste

Toppings to use:

sour cream

chedder cheese – shredded

Instructions

Turn Instant Pot to saute & add your olive oil, garlic & onions.

Cook down until onions are soft

Add cubed chicken & cook about 3-4 minutes with onions. Turn Instant Pot off/cancel for it to cool off.

Now add in any order – salsa verde, broth, chilies, white beans, corn & salt.

Turn Your Instant Pot on using manual setting & set timer for 5 minutes. Once it is finished, do Quick Release for steam.

If using slowcooker, I would cook on high 3-4 hours or low for 6 hours.
