Helpful Tips for Making Baked Potato Chicken and Broccoli Casserole
When making this recipe you can cook the bacon ahead of time and save it for when you are ready to make the dish or you could even use real bacon bits if you find yourself short on time to assemble this recipe. You can also use fresh broccoli or frozen broccoli and just adjust your prep time according to which one you go with. Another time saver is to already have the potatoes cooked from a previous meal or made earlier in the day. Just heat the potatoes up before adding the other ingredients to the pot.

Baked Potato Chicken and Broccoli Casserole

Ingredients
- - 4 tablespoons butter
- - 3 pounds red potatoes
- - ½ teaspoon paprika
- - 2 cups shredded cheese (divided)
- - 1 cup sour cream
- - 3 cups bite-size broccoli florets)
- - ½ teaspoon garlic powder
- - 4 slices bacon (cooked and crumbled)
- - ½ - 1 teaspoon kosher salt
- - 3 cups cooked chicken (chopped)
- - ½ teaspoon ground black pepper
Directions
- Step 1 1. Preheat the oven to 350°F Grease a 10-inch square baking dish with butter.
- Step 2 2. Place the potatoes in a large pot and cover with water. Bring to a boil and cook until fork-tender, about 10-15 minutes. Drain the potatoes and transfer them back to the hot pot.
- Step 3 3. Steam the broccoli until hot and barely softened. It should still be a little crisp. Drain any liquid from the broccoli.
- Step 4 4.Cook the bacon, crumble, and set aside.
- Step 5 5. Smash the hot potatoes with a potato masher. Add the butter, sour cream, salt, pepper, garlic, and paprika. Stir to combine.
- Step 6 6. Add the cooked broccoli, chicken, bacon, and 1 cup of cheese to the pot. Stir to mix thoroughly and pour into the prepared baking dish. Sprinkle with the remaining cheese.
- Step 7 7. Bake for 20-25 minutes, until the cheese has melted and the casserole is heated through.
